This salad draws crowds from afar to our café. We have fine-tuned this recipe over the years to create an exciting balance of distinct tastes which keeps diners coming back for more. A refreshing summer salad, it makes a healthy lunch by itself, but it also pairs well with virtually any entreé for a heavier meal.
• 2 C organic greens
• 8-10 mango slices, julienned
• 3 whole strawberries, thinly sliced
• 2T spiced walnuts
• 2T organic feta
• 1T balsamic vinaigrette*
• 1/2 lb fresh organic chicken tenders
• 1/4 C olive oil
• 1/4 C balsamic vinegar
• 1/4 C soy
• 1/2 tsp tarragon
• 1/2 tsp garlic
• 1/2 tsp thyme
• pinch of black pepper
1. Mix all seasonings into olive oil.
2. Generously coat chicken with seasoned oil.
3. Grill chicken and allow to cool.
1. In large bowl, incorporate all ingredients.
2. Toss with balsamic vinegar.
3. Top with chicken.
Yield: Makes 2 full salads.
