Dining: New Farm-to-Table Initiative
Hilltoppers, located in The Carriage house is lead by Executive Chef Tarver King. His culinary vision of the restaurant showcases the seasonal bounty of the fields and farm at The Goodstone. Chef King's cuisine titillates while providing guests and passersby with an experience that brings them closer to the land, by ingredients provided for their meal.
Chef King's approach is to involve the guest in a pure and honest exploration of the ingredients and flavors found within the estate. King explains, "I want to bring what is growing outside on The Goodstone's farm inside to Hilltoppers' Table, creating a seamless sensory experience for our guests."
Recreational opportunities abound, including a unique outdoor pool nestled within Wisteria-covered ruins of the estates original stone mansion, an all-season Jacuzzi, 4 miles of hiking, walking and mountain biking trails, canoeing, in room massages and spa treatments. Stables are available for boarding guests’ horses on the property. A short drive into the quaint town of Middleburg brings fabulous shopping, antiquing and dining.
The Goodstone Inn & Estate features several unique and exquisitely designed flower, woodland, orchard and kitchen gardens, which extend throughout the property. Head Gardener Airynee May is on staff to maintain and further develop the gardening program – adding “living sculptures” throughout the estate – doing so using sustainable agricultural techniques and the reintroduction of indigenous plants.
The kitchen gardens significantly enhance the farm-to-table cuisine prepared by the Chef King for the restaurant. Vegetables, herbs and edible flowers from the gardens have been featured in culinary selections prepared for the monthly wine dinners and other special events. Future plans include gardening workshops and farm-to-table cooking classes.
